Here is the recipe (as promised) for the vegetarian burrito I ate for lunch today.
INGREDIENTS (SERVES 2)
2 flour tortillas
1 cup cooked rice
1 cup cooked canned black beans
1 cup cooked corn
1 avocado (optional)
DIRECTIONS
1. Stack the tortillas on a paper plate with a paper towel on top of the two tortillas. Microwave for 30 seconds on high.
2. OPTIONAL: mash the avocado with a fork so that it has a guacamole-like consistency with a few pieces of avocado in it.
3. Put 1/2 cup rice, 1/2 cup black beans (1/2 an avocado) and 1/2 cup corn in a thin line/pile on each warmed tortilla. Roll up and enjoy!!!
